Umi Matcha from Match Freak is their highest grade matcha with notes of fresh pea shoot, raw pecan, milky ocean umami. They work with one production house located in Ise, Japan that has been run by the same family since 1945. Tea production in Mie Prefecture, the home of Ise, started at the end of the 9th century and the traditions of dedication and love for these plants have led to a quality of product that is incomparable. The relationships and comprehensive network of farmers that use this production house spans generations and it shows. Matcha this good and with this depth of flavor is something that cannot be rushed or faked.
